What You Need:

Oats: Make sure your oats are certified gluten free.

Peanut Butter: Use natural peanut butter to avoid added sugar and other additives.

Carob Chips: Unsweetened carob chips are used in this recipe. Carob is naturally sweet so you will not miss the sugar.

Parchment Paper: I love Katbite non bleached parchment paper. It comes in a large roll that last several months and makes clean up so much easier.

How to Make No Bake Peanut Butter Oat Bars

First, in a large mixing bowl, pour in the oats, crispy cereal, peanut butter, honey, and vanilla.

Next, use a hand mixer to thoroughly combine all of the ingredients.

Now press the oat mixture into a parchment lined 9×13 baking dish. Set aside.

Melt the Carob Chips

At this time in a double boiler (or make your own by putting a heat proof bowl on top of a saucepan) pour in the carob chips.

Turn on the heat to low until the carob chips are completely melted. Do not let the carob get too hot over 93 degrees) because they will seize up and turn into a goopy mess.

Once the carob chips are melted, immediately pour them on top of the oat bar pan. Spread the melted carob with an offset spatula to evenly coat the bars.

Storage ideas

Store the oat bars in the refrigerator for several days or freeze.

These bars freeze beautifully! I pop them in individual sandwich bags and then into a gallon size freezer bag. You can store them in the freezer for up to a month.
