What You Need:

Eggs: Use pasture raised eggs if you can because they are healthier and they have a much better flavor. If you are using farm fresh eggs, make sure they are at least a week old for the best results.

Tall pot with a lid: I use a tall stock pot with a lid for steaming the eggs.

Steamer basket: I have owned this steamer basket for the past four years and I love it. It can fit over two dozen eggs at a time and has a handle so that you can lower the eggs safely into the hot pot.

How to Steam Eggs

First, place one dozen eggs in the steamer basket and set aside to use in a few minutes. If you use less than a dozen you will need to adjust the steaming time.

I was steaming several dozen in this photo.

Next, pour about 1-1/2 inches of water into the pot. With the lid on put it on the stove and turn on the heat to medium high until the water starts to boil and steam comes out from the lid.

Now take off the lid, insert the basket with eggs, and replace the lid.

Steam the eggs for 20 minutes.

Turn off the heat, carefully remove the lid, and remove the pot from the stove and place it into the sink. Pour cold water on top of the eggs to cover them. This stops the cooking of the eggs. You may need to replace the water to get it nice and cold.

Finally, take an egg out of the water, tap it on the sides against the sink or counter, and then remove the shell from the egg. Rinse the egg to ensure all of the pieces of shell are off of the egg.

Repeat this process until all of the eggs are peeled.
